To use your non stick silicone mat, place it shiny side down on your baking pan or sheet pan and bake as normal. Make sure you bake within the recommended temperature range for your silicone mat, this should be listed on the packaging or website.
Most food grade silicone will withstand temperature up to 220 to 250 degrees Celsius but this will depend on the manufacturer. Silicone molecules expand at a very slow rate meaning they do not conduct heat well, making them ideal for commercial scale baking. They can also go in the freezer, just make sure you don't cut on them as they will easily be damaged by sharp objects like knives and forks.

If you seriously can't live without it, you can find recycled and recyclable baking paper in most supermarkets and eco stores. Aluminium foil is easier to recycle, most curbside pickups in Australia will process foil if it is free from food scraps and in a ball at least as big as a tennis ball.
How long do silicone baking mats last?
A food grade silicone baking mat used regularly should last a couple of years, more if used infrequently. Those who use theirs heavily may notice their mat begins to discolour over time. To avoid discoloration we recommend cleaning your mat as soon as it's cooled to avoid any long term staining. Opting for a dark colour baking mat such as black or grey can also help to prevent visible staining.
Are silicone baking mats safe to use?
Yes silicone bakeware is loved by professional chefs and artisan bakers for its heat resistance and non stick qualities. Make sure you purchase quality bakeware that is food grade silicone as there are an increasing number of silicone items entering the market which contain fillers. These fillers may create an odour when heated and if you notice a burning smell coming from your mat, discontinue use.
How do you clean silicone baking mats?
Your mats can be easily cleaned by placing them in the top rack of your dishwasher. You can also use warm soapy water to clean your mats. For stubborn stains you can soak you mats or treat stains with some baking soda and lemon juice.
